  • 1/2 avocado

Preparation of the quinoa and tuna salad:

Serving  for 2 people:

2 tablespoons of quinoa
2 tablespoons of brown rice
2 tablespoons of millet
1 tomato
1 carrot
1 avocado
6 prawns
2 tablespoons soy sauce
1 small can of olives
Olive oil

Preparation of the quinoa salad with prawns:

1. We wash the quinoa, rice and millet. We put them in a saucepan with boiling water and a little salt.
2. Let cook over medium heat for about 25-30 minutes.
3. Drain if necessary and store in the fridge to cool.
4. After 15 minutes we assemble the salad.
5. We put the quinoa, millet and brown rice in the base, add the diced carrot, avocado and olives.
6. Peel the prawns, placing them to taste on the salad.

7. Dress with soy sauce and a drizzle of olive oil.

Ingredients of the quinoa salad with chicken, mango and lamb’s lettuce:

Serving for 4 people:

  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 bunches of canons
  • 1 filleted chicken breast
  • 1 mango
  • 1 clove garlic
  • 1 lemon
  • 1 chili flakes
  • 1 tablespoon of spicy smoked paprika
  • Freshly ground black pepper to taste

1. Cut the chicken into strips and put it in a bowl.
2. Add the lemon juice, the paprika, the chili, a little oil and a pinch of salt and pepper.
3. Move well and leave to marinate while preparing the quinoa.
4. Put the quinoa together with the broth in a saucepan, add salt to taste and bring to the fire.
5. When it starts to boil, cover and cook for 15 minutes over low heat until the quinoa is “al dente”.
6. Assemble the salad by placing the chopped mango and the lamb’s lettuce on the quinoa, adding a little salt.
7. Brown the chicken in a hot skillet.
8. When it begins to take color, remove from the heat and add the teaspoon of honey and the juice of the remaining half lemon.
9. Give a couple of turns to mix the flavors and place the chicken in the salad.
