1 cup quinoa
2 cups water
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/4 cup kalamata olives cut into 4
1/4 cup feta cheese
3 tablespoons extra virgin olive oil
1 1/2 tablespoon red vinegar
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground pepper

  • 1/2 melon
