Weeknight Lemon Hen Breasts

- 4 small boneless, skinless rooster breasts, about 1 1/2 kilos
- Kosher salt and freshly floor black pepper, to style
- 1 1/2 tablespoons canola oil
- 2 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1/2 medium shallot, diced
- 2 teaspoons chopped recent rosemary
- 1 tablespoon all-purpose flour
- 1 cup rooster inventory
- 2 tablespoons freshly squeezed lemon juice
Instructions:
- Season rooster with salt and pepper, to style.
- Warmth canola oil in a big skillet over medium warmth. Working in batches, add rooster to the skillet in a single layer and cook dinner till golden brown, about 4-5 minutes.
