Weeknight Lemon Hen Breasts

Components:

  • 4 small boneless, skinless rooster breasts, about 1 1/2 kilos
  • Kosher salt and freshly floor black pepper, to style
  • 1 1/2 tablespoons canola oil
  • 2 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1/2 medium shallot, diced
  • 2 teaspoons chopped recent rosemary
  • 1 tablespoon all-purpose flour
  • 1 cup rooster inventory
  • 2 tablespoons freshly squeezed lemon juice

Instructions:

  1. Season rooster with salt and pepper, to style.
  2. Warmth canola oil in a big skillet over medium warmth. Working in batches, add rooster to the skillet in a single layer and cook dinner till golden brown, about 4-5 minutes.
